Thyme is a favorite of chefs and gardeners, as it grows easily and there is at least one variety to suite every tast and location.  Thyme is also beneficial as a partner crop to eggplant, potatoes, and tomatoes to benefit growth and repel cabbageworms and whiteflies.

Grows to a height of 6-15 inches and is a hardy perennial with woody stems and tiny aromatic leaves.  Blooms mid summer with small lilac to pink blossoms in clusters.  Plant is full sun to part shade and is Hardy in zones 5-9.

To harvest, snip foliage as needed during the summer, or harvest entirely twice per season, leaving at least 3 inches of growth.  Bunch together and hang to dry, or first strip the leaves and dry on a screen.  Foliage freezes well in air tight containers or bags.
